Liz’s love for food
“My love for baking began when I was in university. I was introduced to “raw food” and loved discovering good-for-you desserts–made with organic fruit, nuts, and unrefined sweeteners. This led to my first business, Unbaked Cake Co. and later, I developed the first vegan baking course for George Brown College in Toronto. Some of my favourite flavours to bake with are cinnamon, anything apple, and chocolate, chocolate, chocolate, of course!
A few years ago, I was diagnosed with an autoimmune condition called Hashimoto’s Thyroiditis. This diagnosis has fueled my journey in the exploration of healthy and healing foods. What I put in my body is so important and plays such a major role in how I feel each day. This has ultimately impacted a number of ingredients that were once a staple in my baking pantry (and in my cooking pantry too!) I’ve transitioned to gluten-free, grain-free, dairy-free, sugar-free alternatives and strive to create inclusive recipes around dietary restrictions.
My favourite part of the holiday season is bringing together family and friends with delicious food – this usually involves a fun new dish or two! I hope you enjoy my collection of seasonal recipes. I can’t wait to hear your feedback and see all of your creations!”
